Off-the-Shelf Wasn't Good Enough
No serious kitchen cooks on someone else's compromise. Every extractor knows the choice: buy a mass-produced system and spend years working around its quirks, or build the stove you actually need. We built it. COT — Champagne on Tap — was engineered from the ground up around how we cook: small batches, terp-first temperatures gentle enough to keep the flavor on the plate, fully passive recovery, and a design simple enough that training a new extractor takes days, not months.
The design didn't stay a garage project. It went through professional engineering peer review, and it's been in daily production service since 2021 — every jar of White Mousse on a Colorado shelf came off this platform. The zigzag frosted into the steel isn't decoration; it's a signature.
And it's not just ours anymore. COT units are running in licensed facilities beyond our own walls — built, delivered, and installed by the same crew that runs one every day.
