Meet COT

Champagne on Tap — the closed-loop extraction system we designed, built, and put through professional engineering peer review. Great flavor starts with the right hardware, and nothing on the market ran the way we wanted to run.

COT — the White Mousse closed-loop extraction system COT · Champagne on Tap · White Mousse Lab, Denver
Why We Built It

Off-the-Shelf Wasn't Good Enough

No serious kitchen cooks on someone else's compromise. Every extractor knows the choice: buy a mass-produced system and spend years working around its quirks, or build the stove you actually need. We built it. COT — Champagne on Tap — was engineered from the ground up around how we cook: small batches, terp-first temperatures gentle enough to keep the flavor on the plate, fully passive recovery, and a design simple enough that training a new extractor takes days, not months.

The design didn't stay a garage project. It went through professional engineering peer review, and it's been in daily production service since 2021 — every jar of White Mousse on a Colorado shelf came off this platform. The zigzag frosted into the steel isn't decoration; it's a signature.

And it's not just ours anymore. COT units are running in licensed facilities beyond our own walls — built, delivered, and installed by the same crew that runs one every day.

The Design Thesis

Passive Is the Point

1+ LB/MIN
Fully Passive Recovery

COT recovers solvent at over a pound a minute with zero mechanical assistance. Thermodynamics does the work — low and even, the way a chef tempers instead of torches. The system is designed around the physics, not fighting them.

0 PUMPS
Nothing Banging, Nothing Breaking

No recovery pump hammering through your run — no pump to rebuild, no pump to replace, no pump run ruined by one. The loudest thing in the room is the boil.

0 C1D1
No Electronics In the Booth

The extraction side runs with no electronics at all — nothing to spark, no expensive C1D1-rated components to buy, and a much simpler conversation with your fire marshal.

Field Proven

Running in Oklahoma Right Now

This isn't a prototype looking for its first customer. A COT system was built in our Denver shop, delivered to Oklahoma, and installed in a licensed operator's clean room — commissioned by our crew, running product that isn't ours. The machine earns its keep in two states every day.

For Operators

Put a COT in Your Lab

We build COT systems for licensed processors who want equipment designed by the people who cook on it every day — not a catalog SKU with a support ticket queue. And because the design is deliberately simple, your money buys steel, not bells and whistles — no touchscreen you'll never trust, no C1D1 electronics package, no recovery pump on a rebuild schedule. A chef's kitchen, not a showroom.

  • The machine — built to order in sanitary stainless, the same platform running our own lab since 2021
  • Delivery & installation — our crew commissions it in your facility, like we did in Oklahoma
  • SOPs & training — the exact procedures behind 550+ small batches a year, taught hands-on; the simple design means your crew is running solo in days
  • Engineering documentation — peer-review records available to your compliance team on request
  • A phone number that answers — support from the people who designed it, not a call center
